Descrizione: obtained with the rediscovered "ancestral method" which involves the second fermentation in the bottle not followed by disgorging. Aging on Lees gives notes of bread crust next to fruity varietal and minerals. Fine and persistent perlage; unusual slight opalescence due to the presence of yeast.
Food Pairing: aperitifs with finger food, fish crudités, fresh appetizers with vegetables and fish, delicate dishes with seafood and shellfish.
Serve at: 8-10°C
Color: pale yellow, mild veiling due to yeast fermentation (sparkling wine by "ancestral" method, no foul-mouthed).
Smell: delicate, elegant, fresh notes of white fruit overlap with elegant notes of bread crust.
Taste: fresh, good acidity and excellent minerality, with fine, dense and persistent perlage.
